Commended Brasserie at the East Lothian Food and Drink Awards 2007/2008

An atmosphere of quiet elegance is reflected in the new brasserie where the hotel’s Head Chef, William Black and his team, prepare dishes that are modern and also traditional with emphasis on using fresh local produce which surround us in East Lothian and Borders as a general rule.

Seared scallops with findlay's black pudding salad, with aged balsamic                        Belhaven smoked salmon salad with onion and lime salsa                                         Chicken and local game terrine with apricot, lemon and chili compote                              Pea and ham soup with crème fraise and crusty bread                                   

Mains

Rib eye steak of localy reared beef on haggis, malt whisky sauce and chips                       Dunbar trout fillets with crayfish on new potato with a citrus butter dressing                          Thyme roast belly pork, confit garlic, apple mash and calvados jus                                  Pan fried corn-fed chicken, on chorizo, chick pea and tomato stew                                      Wild and field mushrooms with garden peas risotto with flaked parmesan                           

Dessert

Hedgerow raspberries crème brûlée with handmade shortbread                                    Dark chocolate fondant homemade honeycomb ice cream                                           lemon curd tartlet with and vanilla pod custard                                                             Local farmhouse cheese platter, glenkinchie plums and oatcakes
